At a glance

Yong Yi Ting is the Chinese restaurant on the LG level of Mandarin Oriental Pudong, Shanghai. It serves Hangzhou cuisine rooted in local flavours and fresh ingredients, with modern techniques. Consultant Chef Fu Yue Liang leads the direction; the restaurant has held one MICHELIN star since the inaugural Shanghai guide in 2017.[1] [2]

Cooking & identity

The cooking is Hangzhou cuisine at the hotel-fine-dining register: fresh river and sea ingredients, delicate seasoning and a modern presentation. The consultant chef’s Ru Yuan background is a useful reference, but the daily kitchen is a hotel team.[1] [2]

The restaurant’s stated philosophy

Paraphrased from the restaurant, its group or a named chef’s statement.

The official Mandarin Oriental page describes Hangzhou cuisine as rooted in local flavours and fresh ingredients, with authentic techniques creating delicately delicious dishes. It names Consultant Chef Fu Yue Liang and says the restaurant combines Hangzhou essence with modern techniques.

The same page records one MICHELIN star since the inaugural Shanghai guide in 2017. The MICHELIN Guide adds the current one-star distinction.

Why this profile is included

Included through a MICHELIN star, an official Mandarin Oriental statement and a named consultant chef. No separate chef dossier is published because the named chef already has a Ru Yuan profile and the resident team is not individually documented. No dated collaboration was verified.[1] [2]

Independent observations

ChefsLanding · · Editorial commentary on the public record

A hotel Hangzhou restaurant with a consultant chef who already has a major independent restaurant is a useful study in attribution: whose cooking is it? The official page names Fu, but the daily team is anonymous.

We would follow the Hangzhou dishes and the hotel execution, and keep asking for the resident chef’s name.
