At a glance
Yueliang Fu is chef-owner of Ru Yuan and a Hangzhou native. He entered the kitchen at 16 and trained within the Zhiweiguan lineage under Dong Shunxiang. He later led Hubin 28 at the Grand Hyatt Hangzhou, where the restaurant entered Asia’s 50 Best in 2013 at No.25. He also founded the Laotou Youbao Xia restaurant chain before opening Ru Yuan. The current Asia profile names him on the pass.[1] [2]
Cooking & identity
His cooking is built on knife work, repeated testing and the restoration of Hangbang classics. The Gold Medal Braised Pork, West Lake vinegar fish and fish-ball consommé are treated as inherited techniques with room for revision, not as museum pieces.[1] [2]
Why this profile is included
Chef-owner named on the 2026 Asia profile; his career is documented from Zhiweiguan training and Hubin 28 to Ru Yuan, with a named October 2026 collaboration at Chef Tam’s Seasons.[1] [2]
Independent observations
ChefsLanding · · Editorial commentary on the public record
A chef who can make a 400-centimetre ribbon of pork and then admit the fish needed 74 versions is more convincing than one who claims every dish was perfect from the first service. Fu’s record is useful because it shows the repetition behind the signature, not just the signature.
The open question is succession: a kitchen this dependent on one man’s knife work and taste memory has to teach those standards to a brigade, not just hire around them. The dedicated-station system is a good sign. Whether it produces the next Fu, rather than merely executing the current one, is the part worth watching.

Began kitchen work at 16; the interview does not give the calendar year.[1]
- Early training
Trained within the Zhiweiguan lineage under Dong Shunxiang; the interview identifies this as his professional descent.[1]
- After 2000 / 2013
After 2000, led Hubin 28 at the Grand Hyatt Hangzhou. In 2013 the restaurant entered Asia’s 50 Best at No.25. The official 2013 list also contains other mainland Chinese restaurants, so the interview’s “first mainland” label is not retained.[1]
- 2004
Recreated the Gold Medal Braised Pork in 2004 with a roughly 400-centimetre ribbon cut, reducing production time and establishing a widely copied version.[1]
- Before Ru Yuan
Founded the Laotou Youbao Xia restaurant chain; the interview presents it as the commercial base that allowed him to pursue Hangbang research.[1]
- By April 2025
Opened Ru Yuan; the April 2025 interview describes it as less than two years old. The exact opening date is not stated.[1]
