At a glance

Ru Yuan occupies a modern three-storey building inside Hangzhou Botanical Garden, near West Lake. The dining rooms are deliberately understated, with private rooms, a wine cellar and a whisky bar. The kitchen is organised around Hangbang classics; the April 2025 interview records a team of more than 40 cooks, with dedicated stations for signature dishes such as Gold Medal Braised Pork, fish-ball consommé, Longjing shrimp and West Lake vinegar fish. Chef-owner Yueliang Fu is named on the current Asia profile.[1] [2]

Cooking & identity

The cooking is restorationist rather than novelty-led. Gold Medal Braised Pork is cut into a roughly 400-centimetre ribbon, folded into a pagoda and steamed with bamboo shoots; West Lake vinegar fish has gone through 74 versions; fish-ball consommé is chopped on pork skin before being cooked in clear broth. Zhejiang ingredients – Qiantang River fish, Longjing tea, local pork – supply the reference points, while knife work and repeated testing supply the method.[2] [1]

The restaurant’s stated philosophy

Paraphrased from the restaurant, its group or a named chef’s statement.

In the April 2025 MINGCHU interview, chef-owner Fu describes himself as “a Hangzhou person for life, cooking Hangbang cuisine for a lifetime.” He treats old recipes as a technical inheritance to be reworked rather than a fixed repertoire; the Gold Medal Braised Pork and West Lake vinegar fish are presented as problems that have been tested, revised and served again.

The 2026 Asia profile describes the restaurant’s aim as reviving heritage recipes and techniques with patience and precision while celebrating Zhejiang’s produce. The quiet, understated dining rooms are meant to let the food carry the occasion rather than compete with it.

Why this profile is included

Included through a current two-star MICHELIN selection, Asia’s 50 Best No.10, World’s 50 Best No.36 and a named October 2026 collaboration with Chef Tam’s Seasons and La Cime. Restaurant rankings and the chef-owner’s personal career are recorded separately.[1] [2] [3] [4]

Independent observations

ChefsLanding · · Editorial commentary on the public record

Ru Yuan is interesting because it treats old Hangbang dishes as engineering problems, not nostalgia props. A 400-centimetre ribbon of pork and a 74th version of vinegar fish are not folklore; they are repeats, measurements and service constraints. That is a more useful definition of heritage than another paragraph about a grandmother’s kitchen.

The risk is that technique becomes the whole story: a restaurant can turn into a laboratory where every dish is a flex and the dining room is an afterthought. Ru Yuan’s quiet rooms and large brigade suggest the opposite bet – that refinement should disappear into the meal. We would follow the next versions of the fish and the pork, not the trophy shelf.
