At a glance

Ling Long is Jason Liu’s contemporary Chinese restaurant in Shanghai, opened in March 2023 after the Beijing original. The room combines white tablecloths, crimson and onyx walls, Chinese art and gloved service with a deliberately whimsical progression. The menu is an eight-course journey through regional Chinese tastes, organised around xian (umami). Signature dishes include crisp fried tung feng chicken with preserved vegetables and fish maw with parmesan; the meal ends with a Chinese honey dessert.[1]

Cooking & identity

The kitchen uses a fine-dining frame without a solemn museum tone. Courses are built as a series of reveals, with fermented, cured and savoury elements carrying the umami line. Fish maw with parmesan is a useful example: a Chinese texture and a European dairy note in a complex broth, rather than a simple East-meets-West garnish.[1]

The restaurant’s stated philosophy

Paraphrased from the restaurant, its group or a named chef’s statement.

In an October 2025 post on the restaurant’s official Instagram, Jason Liu is quoted: “I will use my whole lifelong to learn Chinese cuisine. And keep innovating – show everyone now the Chinese cuisine is changing.” The restaurant frames that ambition through modern Chinese cooking rather than a fixed regional repertoire.

The 2026 Asia profile describes the menu as an ever-changing set organised around xian, with eight courses drawing on regional tastes and terroirs. The whimsical, nostalgic tone is part of the restaurant’s presentation; the kitchen’s task is to keep those references legible inside a luxury format.

Why this profile is included

Included through a current MICHELIN star, Asia’s 50 Best No.9 and a new entry at World No.53. A June 2025 collaboration at Chef Tam’s Seasons names LING LONG but not the visiting chef; the restaurant is linked without inventing the participant.[1] [2] [3]

Independent observations

ChefsLanding · · Editorial commentary on the public record

Ling Long’s wager is that xian can hold an eight-course trip across China together without turning into a slideshow of regional clichés. The white tablecloths and gloved service are easy to describe; the real work is keeping each region’s taste legible after the luxury filter. Fish maw with parmesan is a useful test case: if the cheese is only a stunt, the dish collapses; if it extends the broth’s savouriness, it earns its place.

The restaurant has risen fast – Beijing in 2019, Shanghai in 2023, Asia No.9 and a World extended-list entry in 2026. That speed is worth watching precisely because the concept depends on change: an “ever-changing” menu can become a treadmill of novelty. We would follow whether the next iteration deepens the xian idea or merely adds another clever reference.
