At a glance
Jason Liu is executive chef and partner of Ling Long. He began at Grand Hyatt Taipei at 16 while attending Taiwan Kai-Ping Culinary School, then worked at Café Bellini Dunnan, Paris 1930 and Bistro 3, where he was chef and owner. He opened Ling Long Beijing in 2019 and Ling Long Shanghai in March 2023. A 2025 award profile also records Western training, Japanese technique and a year-long journey across China, and lists LING YUN Beijing as a new project. The two accounts differ on whether he began at 14 or 16; both are retained.[1] [2]
Cooking & identity
His cooking is a modern Chinese language built from regional references, fermentation and umami, with a technical base that includes Western and Japanese training. The restaurant’s whimsy is not random: each course is meant to advance a journey, and the signature fish maw with parmesan shows how he pairs Chinese texture with a European savoury note.[1] [2]
Why this profile is included
Named executive chef and partner; his career is documented from Taipei kitchens to Ling Long Beijing and Shanghai, with a 2025 The Best Chef recognition. The June 2025 LING LONG event at Chef Tam’s Seasons does not name the visiting chef, so no chef-level event is linked.[1] [2]
Independent observations
ChefsLanding · · Editorial commentary on the public record
A chef who says he will spend a lifetime learning Chinese cuisine has at least chosen a task larger than a signature. The useful question is what that learning changes in the kitchen: which regional technique, fermentation or ingredient actually alters a dish, rather than supplying a press-friendly sentence.
Ling Long’s menu is built to move, which makes it vulnerable to novelty for its own sake. The award recognition is real, but it is not evidence that every new course works. We would rather follow the next version of the xian idea than the next photo of a clever garnish.
