At a glance

Jin Sha is the Chinese restaurant at Four Seasons Hotel Hangzhou at West Lake, on Lingyin Road. It serves traditional Jiangsu-Zhejiang cuisine with local and seasonal ingredients, set in a garden-facing room with traditional architectural details. The beverage programme includes fine tea, premium wine and Chinese huangjiu. Signature dishes include braised pork belly with abalone, Sanmen crab steamed with wine rice or soy, and crispy half chicken with spicy salt.[1]

Cooking & identity

Wang Yong’s cooking is Jiangnan at the luxury-hotel register: braised pork, river fish, crab and poultry, with local sourcing and a clear line to Hangzhou and Zhejiang flavours. The kitchen’s “boundless innovation” claim is best read through the balance of traditional technique and seasonal ingredients rather than through novelty for its own sake.[1] [2]

The restaurant’s stated philosophy

Paraphrased from the restaurant, its group or a named chef’s statement.

The hotel’s official description frames Jin Sha around traditional Jiangsu-Zhejiang cooking, local and seasonal ingredients, and a setting that aims for harmony between people and nature. Tea, wine and huangjiu are part of the meal rather than a separate list of luxury cues.

In his official biography, Wang Yong describes travel and conversations as his main sources of inspiration, and says he cooks traditional dishes he learned from his mother at home. The current team page turns that into a professional statement: craftsmanship with generosity, and dishes that carry terroir, memory and expertise.

Why this profile is included

Included through a current MICHELIN star, Asia’s 50 Best No.85 re-entry, a long Black Pearl record, a named senior chef and a documented 2019 three-chef dinner at Cai Yi Xuan. Restaurant awards and Wang Yong’s personal recognitions are kept separate.[1] [3] [4]

Independent observations

ChefsLanding · · Editorial commentary on the public record

Hotel Chinese restaurants often hide behind a vocabulary of timelessness. Jin Sha’s record is more concrete: a long MICHELIN run, a Black Pearl run, a 2026 Asia re-entry and a chef who has been in the same hotel since 2010. The useful question is not whether the room is elegant – it is – but whether the cooking still has a pulse after years of banquet service.

Wang Yong’s stated inspiration is travel, conversation and the home dishes he learned from his mother. That is a modest, human answer, and a better one than a manifesto. The risk for a restaurant at this level is complacency; the signature dishes are traditional enough that execution is everything. We would follow the sourcing and the consistency, not the next award line.
