At a glance

Wang Yong is Senior Executive Chinese Chef at Jin Sha, Four Seasons Hotel Hangzhou at West Lake. Born in Jiangxi, he previously worked at Whampoa Club in Shanghai before joining Four Seasons in 2010. The hotel’s current page credits him with nearly three decades of professional experience; an earlier press biography gives nearly 20 years. The two official pages are undated, so the discrepancy is retained rather than reconciled. He leads the Jin Sha kitchen and appeared in a 7 November 2019 six-hands dinner at Cai Yi Xuan, Four Seasons Hotel Beijing, with Li Qiang and Chan Yan Tak. The Best Chef Awards 2025 lists him at Two Knives.[1] [2] [3]

Cooking & identity

His cooking is rooted in Jiangsu-Zhejiang flavours and hotel-level technique, with a stated emphasis on local and seasonal ingredients. The signature dishes are not avant-garde: braised pork with abalone, Sanmen crab and crispy chicken. The interest lies in execution and sourcing, not in reinventing the region.[1] [2]

Why this profile is included

Senior Executive Chinese Chef named by the hotel; the record connects Whampoa Club to Four Seasons since 2010, adds Two Knives and GQ recognition, and links the 2019 Cai Yi Xuan dinner.[1] [2] [3]

Independent observations

ChefsLanding · · Editorial commentary on the public record

A chef who has stayed in one hotel kitchen since 2010 and still talks about his mother’s home cooking is making a quiet argument: consistency is not the enemy of ambition. The hard part is keeping a large banquet kitchen from turning that consistency into routine.

Jin Sha’s awards are numerous enough to become background noise. The more useful test is whether the braised pork, crab and chicken still justify the room on a ordinary Tuesday, not on a gala night. We would follow that, and the sourcing behind it, before another line of silverware.
