A researched professional record. Inclusion does not confirm representation, availability or interest in a new project.

At a glance

Opened on Shanghai’s Rockbund in 2012 by Umberto Bombana, the restaurant now names Nicoló Rotella as its Shanghai Executive Chef. Its Italian dining identity combines an established culinary lineage with a current resident team. The Shanghai branch’s two-star distinction is kept distinct from the Hong Kong and Macau restaurants.[1] [2]

Cooking & identity

Italian culinary foundations and carefully chosen produce frame the restaurant. Rotella’s path through Il Sorriso, Il Piccolo Lago, Da Vittorio and New Wave supplies a more precise way of reading the current kitchen than relying on the surname above the door alone.[1]

The restaurant’s stated philosophy

Paraphrased from the restaurant, its group or a named chef’s statement.

The branch’s own introduction describes Bombana’s approach through honest cooking, fine produce and attention to service. Its stated ambition places the quality of ingredients and the completeness of hospitality together.

The same page introduces the resident culinary and wine teams separately: Rotella leads the kitchen, while Ervin Ong is Restaurant Manager and Head Sommelier. It explicitly connects their work through food-and-wine pairing and the standard of service.

Why this profile is included

A two-star Shanghai restaurant whose current resident chef is explicitly identified by its own team page. Included for its Italian identity and named 2025–26 cross-city collaborations; the founder’s name and the resident appointment remain separate.[1] [2]

Independent observations

ChefsLanding · · Editorial commentary on the public record

A famous surname is a splendid signboard and a terrible substitute for knowing who runs the kitchen. Shanghai’s own team page gives us a useful answer: Rotella. We follow the place for the work of that team as much as for the brand’s lineage.

Its cross-city collaborations offer a way to compare how a shared Italian language is spoken by different cooks. That is more interesting than adding the restaurants’ stars together until the poster runs out of space. The useful arithmetic happens in the kitchen, not above the invitation.

Recent developments

  1. 2026 / additional date unconfirmed

Official 2026 programmes continue to name Rotella alongside Bombana and D’Antonio for an August Macau collaboration. ARAYA also lists a white-truffle collaboration with him, but that entry does not state its year clearly and has not been assigned a dated timeline slot.[3] [4]

Collaborations & guest appearances

Projects are deduplicated: multiple nights, venues or reports do not automatically become separate collaborations. Food-and-drink events and shared festival appearances are labelled by format.
