At a glance
Fumée (拂鸣) is a Shenzhen restaurant founded in 2022 by restaurateur David Pan, named after the French word for smoke. The kitchen is led by Reina Chen from 2024. The 11-course tasting menu uses seafood for umami and local fruits, spices and plants for freshness, in a contemporary Chinese-French register. The 2026 Asia profile describes a global feeling with an unmistakably Chinese identity; the MICHELIN guide lists it as innovative fine dining.[1] [2] [3] [4]
Cooking & identity
The kitchen combines French/European technique with Chinese ingredients and a seasonal, story-driven menu. Seafood supplies umami; local fruit, spices and herbs supply lift. Chen’s opera background shows up in colour, stage-like composition and the “起承转合” arc of the menu, but the claim should be read through the cooking, not the biography alone.[3] [4] [1]
The restaurant’s stated philosophy
Paraphrased from the restaurant, its group or a named chef’s statement.
In a March 2026 iWeekly interview, Reina Chen describes moving from Kunqu opera to the kitchen at 30 and says her opera training enters the plate through colour, stage and costume, giving courses a “起承转合” structure. The interview section is headed “热爱可抵万难” (love can overcome all difficulties); she describes the work as daily, grounded execution.
The 2026 Asia profile describes Fumée’s 11-course menu as seafood-led umami with local fruits, spices and plants for freshness, under a chef who believes in storytelling through food. The restaurant’s name and its global-Chinese identity frame that narrative.

Independent observations
ChefsLanding · · Editorial commentary on the public record
The opera-to-kitchen story is a good story, and therefore a dangerous one: it can make reviewers describe “theatre on a plate” without checking whether the food is any good. The useful question is whether the Kunqu training produces a real structural idea — colour, sequence, contrast — or just a press release.
Fumée’s seafood-umami/local-fruit-spice formula is more concrete. The risk is a menu that tastes like a concept: global, Chinese, seasonal, narrative, all at once. We would follow the 11 courses for whether the story tightens the cooking or merely decorates it.
