At a glance

Jie Xiang Lou is a Zhejiang restaurant set in the bamboo forest of Seven Villas on Bapanling Road in Hangzhou. The kitchen works with Zhejiang terroir and a monthly seasonal menu; the MICHELIN Guide highlights Mrs Song’s fish stew with yellow croaker and candied lotus root stuffed with sticky rice. The restaurant was promoted from one to two MICHELIN stars in the 2026 selection; its Executive Chef is Bin Yu.[1] [2] [3]

Cooking & identity

The cooking keeps a strong Hangzhou/Jiangnan base but does not treat tradition as a fixed script. In his 2019 interview, Yu estimates that 70–80% of the kitchen’s dishes carry a traditional Hangzhou shadow, then adjust the technique, sourcing or presentation. The monthly menu and the use of international ingredients are part of that revision, not a rejection of the base.[3] [1]

The restaurant’s stated philosophy

Paraphrased from the restaurant, its group or a named chef’s statement.

In the 2019 interview, Yu describes “beauty” as a daily discipline rather than a decorative finish. He speaks about training the team’s eye with artists and photographers, and about building a dish from a traditional Hangzhou base before changing technique, ingredient or presentation.

The same interview gives his working motto, “顺势而为” (go with the current), and his ambition to put Zhejiang cuisine on the world stage. The 2026 MICHELIN Guide Mentor Chef Award article adds the institutional side: decades in the industry, a systematic training system and young chefs now working across China.

Why this profile is included

Included through two MICHELIN stars in 2026 and a documented chef with a long 2019 named interview covering his cooking philosophy and career. No dated collaboration was verified for this batch; that does not mean none took place.[1] [2] [3]

Independent observations

ChefsLanding · · Editorial commentary on the public record

“Beauty” is a dangerous word in restaurant writing: it usually means a smaller plate and a larger bill. Yu’s version is more useful because he treats it as training — artists, photographers, daily practice — and keeps 70–80% of dishes rooted in Hangzhou cooking. The question is whether the aesthetic work makes the Zhejiang base clearer, or merely puts a nicer frame around it.

The Mentor Chef Award is a more concrete signal than another star: it says the kitchen can reproduce a standard through other people. The useful test is whether the young chefs he trained can make a dish that is recognisably Jie Xiang Lou without his hand in the pass.
