At a glance

Chao Shang Chao is a Chaozhou-Cantonese restaurant on the fourth floor of CP Center in Beijing’s Chaoyang district. The dining room includes a flower-maw museum and private rooms named after the character “潮”; the kitchen uses precious and seasonal ingredients. Executive Chef Zhang Yifeng (Yat Fung Cheung) leads the team; the restaurant holds three MICHELIN stars.[1] [2] [3]

Cooking & identity

The cooking is Chaozhou-Cantonese at the luxury end: braised fish maw, Chaozhou braises and fried kway, with a tea and wine programme. The flower-maw museum and room names make the regional identity explicit rather than decorative.[2] [1]

The restaurant’s stated philosophy

Paraphrased from the restaurant, its group or a named chef’s statement.

A 2023 名厨 article quotes the restaurant’s stated mission: “用收藏级美味,宴请最重要的人” — use collector-grade deliciousness to host the most important people. It describes a collection of precious and seasonal ingredients turned into Chaozhou-Cantonese dishes.

The same article describes the flower-maw museum and private rooms named “潮”; the MICHELIN Guide lists the restaurant at three stars. The Mentor Chef Award is recorded separately as a personal recognition, not mixed into the restaurant’s philosophy.

Independent observations

ChefsLanding · · Editorial commentary on the public record

A flower-maw museum inside a three-star Chaozhou restaurant is a very specific statement: the luxury ingredient is not hidden in the kitchen, it is put on display. The useful question is whether the cooking treats the maw as a subject or as a price tag.

The Mentor Chef Award adds a second story: a kitchen that can train others. We would follow the braises and the mentoring, not the museum.
