At a glance

Yu Zhi Lan is a small Chengdu restaurant on Changfa Street, owned and led by chef Lan Guijun. Its cooking is built around soup rather than heavy seasoning: “汤定味,以食材定格,以调辅料定神” — soup sets the flavour, the ingredient sets the structure, and seasonings finish the spirit. The restaurant holds two MICHELIN stars.[1] [2]

Cooking & identity

The kitchen puts the “true nature of food” first: understand the ingredient, use soup to carry its flavour, and keep seasonings as a finishing tool rather than the main event. The result is a Sichuan register that does not rely on the usual heavy oil, chilli and sauce.[1]

The restaurant’s stated philosophy

Paraphrased from the restaurant, its group or a named chef’s statement.

In the 2020 名厨 interview, Lan Guijun states the method directly: “汤定味,以食材定格,以调辅料定神.” He puts the true nature of the ingredient first, uses soup to define flavour, and treats local seasoning as one means of expression, not the point.

The same interview gives his working line: “只要能驾驭的就是你的菜.” The claim is not that anything goes, but that a chef must understand an ingredient well enough to control it before adding a regional signature.

Independent observations

ChefsLanding · · Editorial commentary on the public record

Yu Zhi Lan is a useful rebuke to the idea that Sichuan food must shout. Soup, ingredient and a late hand with seasoning can carry the cuisine without turning every dish into a chilli test. The risk is that “purity” becomes a luxury position rather than a cooking method.

The useful test is the soup: does it make the ingredient clearer, or does it merely make the bill larger? We would follow that, not the “true nature” slogan.
