At a glance
JL Studio is Jimmy Lim’s contemporary Singaporean restaurant in Taichung. His childhood hawker flavours are interpreted through Taiwanese ingredients and contemporary technique. It began in 2017 and was promoted to three MICHELIN stars in 2023. The restaurant’s own current website lists its address on Cunzhong Street; older guide profiles retain a previous address.[1] [2] [3]
Cooking & identity
Local produce carries memories of Singapore’s food rather than reproducing a hawker stall literally. The tasting menu is a way of working between places: ingredients grow in Taiwan, while the sensory reference points come from the chef’s Singaporean upbringing.[1] [3]
The restaurant’s stated philosophy
Paraphrased from the restaurant, its group or a named chef’s statement.
The restaurant’s own introduction gives Jimmy’s aim plainly: to let the world see Singaporean cuisine. It describes Singapore’s spice traditions taking root in Taiwan, with ancestral knowledge informing a contemporary dining language.
In his first-person interview, Lim recalls replacing an almost-finalised European menu shortly before opening. He then had to reconsider both Singaporean and Taiwanese tastes, learning how to keep his reference points while making them understandable to local diners.
[1] [2]Why this profile is included
Included through Asia’s 2026 Top100 and a chef-led Singaporean concept in Taichung. The record also retains an older named exchange with Labyrinth, keeping the restaurant’s regional connections visible.[1] [2] [3]
Independent observations
ChefsLanding · · Editorial commentary on the public record
A Singaporean kitchen in Taichung is a useful rebuke to the belief that local identity needs a fixed postcode. The interesting part is the work between memory and a new ingredient supply. A passport on the plate is easy; keeping the accent when the ingredients change takes cooking.
We follow JL Studio for that specific ambition. The useful test is whether each change makes a remembered flavour clearer, rather than merely making lunch harder to recognise. Childhood does not become more profound every time somebody adds tweezers.
