At a glance

Vianney Massot is Executive Chef of Blackswan in Beijing. Born and raised in Paris, he entered the kitchen young and joined Joël Robuchon’s group on his 18th birthday. Over nearly a decade he worked across the group’s global restaurants and research-and-development teams, contributing to menus and new openings. He later led an intimate fine-dining restaurant bearing his name in Singapore, earning critical and industry recognition, before moving to Blackswan. The Best Chef Awards 2025 lists him at One Knife.[1] [2]

Cooking & identity

His cooking is a refined, contemporary reading of classical French cuisine: precise technique, seasonal ingredients and elegant flavour profiles rather than heavy ornament. The Blackswan room is dramatic; his job is to keep the plate from becoming a prop.[1] [3]

Why this profile is included

Named chef on the official restaurant site and in the MICHELIN guide; The Best Chef lists him as Executive Chef. The professional profile records his Paris training, nearly a decade with Joël Robuchon and his Singapore restaurant before Blackswan.[1] [2]

Independent observations

ChefsLanding · · Editorial commentary on the public record

Robuchon is a powerful training ground and a heavy shadow. The useful question is not whether Massot can reproduce a Paris sauce; it is what he does with Beijing produce and a dining room that already has a swan in it.

The turbot with two sauces is a good test: a classical dish can look old-fashioned or precise, depending on execution. We would follow that plate and the seasonal sourcing, not the museum address.
