At a glance

Hokkaido-born chef leading logy. Training in Italy and at Florilège in Tokyo preceded his move to Taipei, where his work explores Taiwan through ingredients and broader Asian references.[1] [2]

Cooking & identity

A multi-course seasonal format linking Japanese and Taiwanese elements. The kitchen’s local exploration appears in collaborations with JL Studio and Potong as well as its own menus.[3] [4] [5]

Why this profile is included

Included for a documented Taipei–Taichung collaboration and an older Bangkok–Taipei exchange. The career record explains how Italian and French training meets the Taiwanese context.[4] [6] [5] [7] [8]
