At a glance

Tony Lu is the head chef of Fu He Hui and a Shanghai native. A 2017 profile records that he became a consultant to the Fu Group in 2005 and later rose to chef de cuisine; it identifies him as the restaurant’s head at the time. The 2021 founder interview and the 2026 Asia profile place him at the centre of Fu He Hui’s vegetable-focused kitchen. The Best Chef Awards 2025 lists him at One Knife.[1] [2] [3]

Cooking & identity

Lu’s approach is ingredient-led and technique-heavy: source seasonal vegetables from specific regions, then use cooking, knife work and tea to give them structure rather than disguise them as meat. The kitchen’s rejection of mock meat is the clearest expression of that position.[1] [2]

Why this profile is included

Named head chef; the record documents his move from Fu Group consultant in 2005 to chef de cuisine, a vegetable-led approach and a 2025 One Knife recognition. No dated collaboration was verified for this batch.[1] [2] [3]

Independent observations

ChefsLanding · · Editorial commentary on the public record

The most useful thing about Lu’s record is not the number of years but the decision at the founding: stop asking vegetables to impersonate meat. That choice gives the kitchen a clear technical agenda – sourcing, texture, tea – instead of a decorative one.

The risk is that “Zen vegetarian” becomes its own luxury costume. The quarterly menu and single-ingredient courses are a better defence than any amount of stone and timber. We would follow whether the next season’s vegetables still surprise, not whether the room photographs well.
